Greatest Ever Gluten Free Granola Bars

Gluten Free Granola Bars

The original, non-gluten free recipe was from

I’ve been making these bars for years.

Makes 36 bars


1/2 cup quinoa flakes
1/2 cups rice flakes
1 cup rice bubbles
11/2 cup puffed amaranth
1/4 cup rice bran
1 cup chopped walnuts
1/2 cup pumpkin seeds
1 cup sunflower seeds
1 cup raisins or other dried fruit
1 cup semi-sweet chocolate drops
1 400g can low fat sweetened condensed milk
1/8 cup water if necessary to hold together


Line a 38 × 25cm (15 × 10″) pan with baking paper.
Combine all ingredients by hand (literally) in a large bowl. Mix well.
Spoon into prepared pan evenly.
Cover with another piece of baking paper. Press with hands, wooden spoon, wooden block or rolling pin without handles. It is important to compact the mixture as much as possible.
Bake in a preheated oven 160°C (325°F) for 25–28 minutes or until golden brown. You can lay strips of aluminum foil over the edges half way through to help the mixture bake evenly.
Lift out of baking pan, cool. To make cutting easier, I trim off the edges while still a little warm then chill for several hours or overnight before cutting into bars. Store in freezer, they thaw quickly.

    I really need to try these, Clare, they look great. I love that you can freeze them – I’m always thinking I shouldn’t make these things because I would eat them all, but being able to freeze them would be great.

      Thanks for your comment, I hope you do make them some day. Not only can you freeze them, they don’t keep as well out of the freezer with only the sweetened condensed milk (and compacting as much as possible) holding them together.
